''Ice on Ice'' Fluffy and Fruity Kakigori

''Pure ice'' as they call it, is carefully prepared, taking over 48 hours at around -10 degrees with such care and technique that the completed ice cube is perfectly unblemished, absolutely transparent and flawless. Tea Salon ''Sabo Toka'' is a cafe set in the precinct of Byodo-in Temple in Uji, one of the World Heritage sites Kyoto is proud of. This summer's brand-new ''Ice-brewed'' Uji Gyokuro will be a sensation for even long-term tea lovers. Gyokuro, the finest ranked green tea from Uji, is extracted using only an ice cube. Taking a full night to infuse; the lower the brewing temperature, the more umami and less bitterness is produced. Inside a transparent blue dome formed by kanten agar-agar jelly with the faint flavor of plum swim two kingyo goldfish. Another artistically represents an ayu sweet fish, swimming in the pure stream of Kibune River, in the northern area of Kyoto. Admire the delicate handiwork of their experienced wagashi patissier who is a true artist, achieving such beautiful and, not to mention, delicious wagashi of Kyoto.

''y'' Gion is a place where local and international creatives can come together to enjoy diverse experiences in one building, sharing ideas in a beautifully-designed space. Until the end of summer, the city's original creators of the fresh fruit chu-hi, Sour, have taken over the rooftop to open the Sour Garden pop-up.
